مواد اولیه

براي خريد باقالي مرغوب چند نكته وجود دارد كه بايد به آن توجه كرد. يكي از نشانه هاي باقالي خوب رنگ  سبز آن است ديگر اينكه بين دانه و پوست فضای خالی وجود نداشته باشد. پوست دانه نيز بایستي سبز باشد. هر چقدر دانه سفت باشد و رنگ آن به زردي و قهوه اي متمايل باشد كيفيت آن پايين است.

گام ۱

ابتدا پوست خارجي را از بخش انتهاي باقالي خارج كنيد.

نوار كناري پوسته را جدا كنيد

بدين ترتيب غلاف به طور كامل باز ميشود

يك قابلمه برداشته ،‌ داخل آن آب ريخته بگذاريد تا بجوشد. سپس مقداري نمك به آن اضافه كنيد و باقالي ها را درون آن بريزيد و بگذاريد به مدت 5 دقيقه بجوشد. سپس آن را آبكش كنيد

يك ظرف از آب و يخ برداشته باقالي ها را درون آن بريزيد و به اصطلاح شوك به آن وارد كنيد. حدود 3 تا 5 دقيقه. اين كار باعث مي شود كه هم پوست باقالي به راحتي كنده شود و ديگر اينكه آنزيمهاي موجود در باقالي كه موجب رنگ پريدگي آن است غير فعال و آماده براي فريز كردن ميشود.

كمي از پوست بالاي دانه را برش دهيد

و با كمك دو انگشت دانه را به سمت جلو هل دهيد

گام ۸

دانه هاي باقالي آماده براي مصرف و يا انجماد مي باشند.
